Ingredients

  • 4 veal or pork cutlets (6 oz each), pounded thin
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten with 1 tbsp vegetable oil
  • 1 cup fine breadcrumbs
  • Clarified butter or lard for pan-frying

Preparation Steps
